Whole30 Day6 started off with a slow and quiet walk in our local mall. We couldn’t seem to muster the energy to keep our normal pace. For some strange reason the energy of the last few days was obviously lacking today.
Later in the day we managed a trip to Wal-Mart and Whole Foods to gather ingredients for our selected recipes. Poor guy at Whole Foods was a bit baffled when I asked for coconut aminos. What are you cooking with those, he asked? I have no idea. My husband does the cooking. Grocery shopping for the items he needs is like a great scavenger hunt. Glad I could make the guy at Whole Foods laugh. Just for future reference you find it with soy sauce.
It was a great day to stay in and cook. The morning started out cool, temperatures in the mid thirties. The high today was in the low-mid fifties.
So what did we cook? Sausage pizza egg muffins, baked buffalo chicken casserole and our breakfast sausage for the week. Leftovers for lunch enabled us to clean out the refrigerator in preparation for the coming week. Dinner gave us the chance to try our two newly found recipes. The muffins were really good, of course we included a few chopped jalapeno peppers to give it a kick. The baked chicken casserole tasted fine but seemed to be missing something to pull it all together.
Oh, how could I forget? Shawn made sweet potato applesauce mash. I’m not a big fan of sweet potatoes, but I was game. Since I did the shopping I picked up a bag of sweet potatoes and several gala apples. Seemed very straight forward to cook the potatoes in the oven while the apples were boiling in water on the stove. As applesauce it was rather bland – no you can’t add any sugar. But adding the mixture to the mashed sweet potatoes and adding cinnamon made a very nice tasting dish.
Hopefully tomorrow will be better than Whole30 Day6 for energy. We have a few more recipes to try out.
